Edamame Salad

As promised, here is the recipe for delicious, EASY Edamame Salad:

1 package frozen, shelled edamame
cherry tomatoes, cut in half
1/4 of a red onion, chopped
Parmesan Cheese, shredded (I have used feta as a substitute)
balsamic vinegar
olive oil
salt and pepper to taste

Cook edamame according to package directions. Combine edamame, tomatoes, and red onion. Then mix together 2 TBS vinegar, 1 TBS olive oil and salt and pepper in a jar, shaking well to combine. Pour over veggies and stir. Chill, covered until serving time. Add cheese just before serving.

I didn't take a picture, simply because I don't photograph food so that it is actually appetizing. However, it is a BEAUTIFUL salad. We served it to friends with grilled corn on the cob and barbequed chicken. You'll want to lick the bowl!
