bon appetite

LOML and i had the best dinner tonight! it was easy and VERY quick and quite healthy...so i thought i'd pass along the menu and recipe to y'all.

spicy grilled shrimp with mango salsa (recipe below- from tables of content)
steamed sugar snap peas (green giant frozen box- prepare in microwave)
rice with pine nuts and basil (prepare rice according to package directions- but with low sodium chicken broth instead of water; toast pine nuts; once rice is ready, toss with a little basil and pine nuts)

shrimp:

first, combine 1 ripe mango, peeled and chopped, 1/4 cup fresh lime juice, 2 tablespoons cilantro, 1 tablespoon lime zest, 1/2 jalapeno chile. mix well and chill, covered for at least an hour.

while salsa chills, mix 2 tablespoons olive oil, 2 tablespoons fresh lime juice, 1 1/2 teaspoons lime zest, 1/8 teaspoon crush red pepper, 1/2 teaspoon salt, and 1 pound of medium peeled shrimp. stir to coat and chill covered for thirty minutes.

place shrimp on skewers and grill or broil 3 minutes per side until pink. serve with salsa.


it's a lot prettier than the picture shows. darn that camera (or picture taker)!

now if only i had broken out the fine china and re-used matt's birthday centerpiece, it would have been terribly romantic! :)
