Holiday baking...and drinking

I thought I'd share a yummy little recipe that's super easy and super delicious. At least to me. We discussed this recipe at Not Bunco and to some, it's a tad bit sweet. I, on the other hand, live to eat sugar so I find it totally delicious.

Before you get started, do yourself a favor and make a nice holiday cocktail. Cranberry Sierra Mist + Gin + lime= holiday geniousness. Now, if I make this drink, I can have at least two. If LOML mixes it up for me...only half the glass. So, pick your evil. It's good, y'all. And festive to boot.





Ingredients-
2 sticks real butter (do NOT use light butter)
1 cup packed brown sugar (light or dark)
Chocolate chips
Sleeve and a half of saltines
finely chopped pecans



Grease a foil lined cookie sheet that has sides. Preheat oven to 400. Melt butter and sugar in saucepan. Bring to a boil and let boil for 3 minutes- this is very important. No longer, no less. While that is boiling, line cookie sheet with saltines. After three minutes, pour mixture over saltines to cover. Bake at 400 for 5-6 minutes. After baking, sprinkle chocolate chips and let sit until soft. Spread chocolate to cover and top with pecans. Press pecans into chocolate with the bottom of the measuring cup to hold them tight. Put pan in the freezer until completely cooled, then peal from foil and break into all size pieces. I packaged mine in holiday goody bags from the dollar tree (25 bags for $1? I"ll take two.) One cookie sheet makes about 5 bags. I'm hoping to make time to attach these labels to it, but we'll see.

OH! And I am no PDub, but am having a lot of fun playing around with Picasa a la Sarah Barry. Just if you were wondering what's up with the pictures here lately.

PS- It's 7:45 and I haven't heard a peep from Little One or LOML.

PPS-What the heck am I still doing on the computer?

Yum Yum on the recipe. The salty - sweet combo looks so good to me right now. Wish I could jump through the screen.

I just spent 15 minutes going through my favorite food blogs trying to remember where I saw this saltine cracker recipe after I saw it again in the NYT. (http://www.nytimes.com/2010/12/15/dining/15cookierex1.html?ref=dining) Then I remembered it was on a family blog and not a food blog! Mystery solved! I think the universe is telling me I need to make this.
