Confessions from the Test Kitchen


So that Banana Bread I made. Silly me. When I read a 1/2 Cup of butter, I thought I read 1/2 stick. Yup, it's a bit dry. Little One is in love. I am not.

And that Slow Cooker Chicken and Dumplings...Ick. I'll never try it again. I had high hopes.


HOWEVER, last night, I hit a home run. Man, oh man was the Warm Tortellini Soup divine. Di-Vine I tell you. I didn't take any pictures because I've found that when I take pictures of food, it looks totally unappetizing. So, I'll spare you. But I will share the recipe (It's from Tables of Content):

6 Cups chicken broth (it calls for 4, but I used 6)
9 oz cheese or chicken tortellini
15 oz cannellini beans drained and rinsed
15 oz diced Italian style tomatoes
1/4 Cup fresh chopped basil
1 1/4 TBS balsamic vinegar
salt and pep to taste
Parmesan cheese for garnish

Bring broth to a boil. Add tortellini and cook for 4 minutes. Stir in the beans and undrained tomatoes. Reduce heat to low and simmer for 5 minutes. Remove from the heat and stir in basil, vinegar, salt and pep. Ladle into bowls and top with parm. Mmmm. Delicious.
